Take a deep casserole dish with a lid - like the kind made by Corning Wear.Cut up in large chunks - quarters even, or at least eights the following in equal amounts:Red Pepper, Zucchini, Yellow Squash, OnionPut these in the dish with a drained can of garbanzo beans.To this add as much garlic as you can stand. I once used the dried, sliced garlic from an Asian Grocery Store... wow... that was garlicky - but then this is called Garlic Soup.Open a bottle of dry white wine. Do not skimp on this and use cheap wine... and esp. not Riesling. Pour the contents over the veggies and slide into the oven. Bake at about 350 degrees for 1.5 hours.Remove and add 1 pint heavy cream and 1 cup grated parmesean cheese.
Serve with Crunchy bread
